The cuisine of North India is
very diverse and vast. The geographical location with relation to the
Sub-continent region of the country has had a strong Central Asia impact on both
its culture and its food. Kashmiri and Mughlai styles of cooking are followed
which are not just prevalent but popular. I will share a few well-known street foods
from the North known for their lip-smacking taste which will keep you drooling.
So, let’s get started.
- - ALOO TIKKI
It is known for being the most popular street
food item sold in North India. A North Indian aloo tikki is prepared using a
cooked spicy chana dal or green peas or paneer. It is also enjoyed in the other parts of India
as well but by preparing a savory filling made up of boiled mashed potatoes,
seasonings and herbs. There are plenty of ways to prepare an aloo tikki in
terms of taste and flavours. It is served along with a sweet tamarind chutney,
spicy coriander/mint chutney, finally chopped onions and coriander leaves, curd
and a pinch of chaat masala.
- - DAULAT KI CHAAT
As fancy as its name sounds Daulat Ki chaat is a
street food item, which is available only in bone-chilling months. This
delightful dessert has a frothy and creamy texture which is obtained by whisking
sweetened milk for hours together followed by keeping it overnight in the open
to soak in the dew. It is garnished with Malai, pistachio, khoya and powdered
sugar which gives this dessert a mildly sweet taste. This delicate and fine dessert
is known as Daulat Ki Chaat in Delhi, Malai Makhan in Kanpur, Malayo in
Varanasi, and Nimish in Lucknow.
- - KANJI VADA
Kanji Vada is a local delicacy of Rajasthan. It is
a fermented drink made up of bite-sized crisp fried moong dal vadas immersed
in a tangy mustard flavoured kanji. It is fermented for over three days and
prepared with a variety of salts. It is best served and enjoyed chilled. It works
wonders in detoxifying your liver and thereby, aiding digestion and is
delicious at the same time.
- - MONJI GAADE
If you are a seafood lover, especially fish, you
definitely got to try out this Kashmiri delight. Monji Gaade is a popular
street food of Kashmir. This snack is prepared by dipping fish in a batter made
of rice flour and besan, seasonings such as salt, spices, and colour of choice.
The fish is then deep-fried and enjoyed while it’s hot enjoying the cool
weather out there. It is the perfect snack for every fish lover.
- MOMOS
Momos have been a delicacy in Nepal and
Tibetan communities in Bhutan, as well as in the regions of Ladakh,
Uttarakhand, Himachal Pradesh, Sikkim, Darjeeling, Assam, and Arunachal Pradesh
Momo is a type of steamed dumpling stuffed with a filling of ground/minced meat,
but this has changed in the modern era, and the fillings have become more
elaborate. Nowadays, momos are prepared with virtually any combination of
vegetables, tofu, paneer cheese ground meat, soft chhurpi (local hard cheese)
and meat combinations.
