I would like to start off with a famous quote by Chef Anthony Bourdain. In India, street food is adored by everyone. As trends change, the street food vendors need to adapt to the current trends and come up with an innovative dish which creates an urge among their customers that will help attract customers to enjoy street food. 





 The Culture followed over the years, the Cuisine of each region, every household may prepare traditional recipes but their style of cooking may differ from their neighbor in terms of a secret ingredient added into their dishes which is "Love".


CULTURAL INFLUENCE

·       Odia Cuisine also known as the cuisine of the state of Odisha. Hinduism, Jainism and Vaishnavite are the local cultures that have developed overtime. To be more precise, the dishes prepared are sweet and less with the perfect balance of flavour.

 


·       The local culture and traditions are deeply rooted to Adivasi (cuisine of Jharkhand) food systems that has brought life to these native people who are closely linked to nature and its resources.

 

·       Seafood is consumed in variety in West Bengal. Prawn Malai curry, patori, ilish Mach etc. are the most unique dishes prepared in this state. Rice, Roti, Vegetables with thick curry, fish, egg and meat are the staple foods of their day-to-day life.

 

·       This cuisine similar to North-Indian cuisine, influenced by eastern Indian cuisine like Bengali (Bihari's use mustard oil for cooking). Kadhi Bari, Khichdi, Ghugni, Pittha, Sattu, Dhuska and Litti are some of the traditional dishes served.

 

FAMOUS STREET FOOD

CHAKULI PITHA


Native to Orissa it is a traditional dish which is very well known as street food. Traditionally prepared on certain occasions and is now widely popular. It is salty in taste and can be accompanied along with items like a chicken or mutton curry. This delight can be served with a dal or a lentil soup for vegetarian lovers.

 

DHUSKA GHOLA


This dish is a must-try for those who love street food. Dhuska is prepared by grinding soaked basmati rice and chana dal. It is popular in the state of Jharkhand.

 

MUGHLAI PARATHA

This dish is a heavenly delight of the Bengali cuisine. A thin layer of whole wheat flour along with egg, deep-fried to crisp, with egg, mutton or chicken chunks and a whole lot of spices. Originated in the Mughal kitchens during Jahangir's era when the ruler was bored of usual parathas and keema.

 

LITTI CHOKHA

                      

A ball made up of a dough of whole wheat flour and stuffed with gram flour, pulses and mixed with herbs and spices. Litti, along with chokha, is a complete meal that originated from the Indian state of Bihar. It is best served and enjoyed along with some desi ghee.
